Instant Pot Short Ribs with Mushrooms & Spring Vegetables Recipe

This flavorful dish starts with tender, fall-off-the-bone beef short ribs, which are first seared for rich depth. Then, they’re pressure-cooked in red wine along with aromatic herbs and hearty mushrooms. As the ribs become melt-in-your-mouth tender, sweet spring vegetables like peas and asparagus are added at the end for a burst of freshness. The result is a comforting yet elegant one-pot meal, ready in under 90 minutes — thanks to the ease of the Instant Pot.

Ingredients:

  • 3–4 lbs beef short ribs (bone-in or boneless)
  • Salt & black pepper
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1½ cups dry red wine
  • 1 cup beef broth
  • 1 tsp dried thyme (or 2 sprigs fresh)
  • 1 tsp dried rosemary (or 2 sprigs fresh)
  • 2 bay leaves
  • 1 cup baby carrots
  • 8 oz mushrooms, halved (cremini or white)
  • 1 cup frozen peas
  • 1 bunch asparagus, cut into 2″ pieces
  • 1 tbsp butter (optional, for glossy sauce)

🔧 Instructions:

1. Sear the Short Ribs

  1. Set Instant Pot to Sauté mode (high).
  2. Season short ribs with salt and pepper.
  3. Add olive oil and sear ribs in batches (3–4 minutes per side). Set aside.

2. Sauté Aromatics

  1. In the pot (leave juices), add onion and sauté 2–3 min.
  2. Add garlic and tomato paste, then cook 1 min more.

3. Deglaze with Wine

  • Pour in red wine. Then stir and scrape up browned bits. Simmer for 2–3 minutes.

4. Pressure Cook

  1. Return ribs to the pot.
  2. Add broth, herbs, bay leaves, carrots, and mushrooms.
  3. Cancel Sauté. Lock the lid. Cook on High Pressure for 45 minutes.
  4. Natural release for 10–15 minutes, then quick release.

5. Finish with Spring Veggies

  1. Open the lid. Stir in peas and asparagus.
  2. Close lid again (no pressure) and let sit on Warm for 5–10 minutes, until veggies are just tender.

6. Optional Final Touch

  • Stir in butter to finish the sauce.

Serve over:

  • Creamy mashed potatoes
  • Buttery polenta
  • Rice or crusty bread

Finally garnish with chopped parsley or fresh thyme if desired.
